Dark chocolate, peanut butter, a simple traybake, children can help press the mixture into the tray and bash the biscuits for you too.

Makes a perfect afternoon treat, for the adults, pair it with a cup of coffee.

Makes 16 squares

Ingredients:

  • 200g dark chocolate - broken into chunks
  • 150g unsalted butter
  • 250g ginger biscuits
  • 100g soft dark brown sugar
  • 300g crunchy peanut butter
  • 1 tsp vanilla extract

Method:

  1. Line a 7inch tin with parchment paper, make sure some is hanging off the sides to ease lifting later.
  2. Melt the chocolate in a microwave of 30-second intervals. Be sure to mix after each burst; you don't want to burn it. 
  3. Melt the butter in the microwave, 10-second intervals and be sure to stir. 
  4. Blitz the biscuits in a food processor, or place them in a zip lock bag and get your kids to bash them with a rolling pin. Stir the biscuit mixture into the butter. Add the peanut butter and vanilla extract and stir gently.
  5. Pour the mixture into the lined tin. Let your children pat the mixture down using the back of a spoon. Make sure it's all even. 
  6. Pour the chocolate on top of the mixture and spread evenly. Chill overnight in the refrigerator
  7. Remove from the tin, gently lift from the flaps, cut into 16 squares or smaller if you wish. 
  8. Store in an airtight container and keep in the fridge. They will last approximately 3-4 days.
