Makes 16 squares
Ingredients:
- 200g dark chocolate - broken into chunks
- 150g unsalted butter
- 250g ginger biscuits
- 100g soft dark brown sugar
- 300g crunchy peanut butter
- 1 tsp vanilla extract
Method:
- Line a 7inch tin with parchment paper, make sure some is hanging off the sides to ease lifting later.
- Melt the chocolate in a microwave of 30-second intervals. Be sure to mix after each burst; you don't want to burn it.
- Melt the butter in the microwave, 10-second intervals and be sure to stir.
- Blitz the biscuits in a food processor, or place them in a zip lock bag and get your kids to bash them with a rolling pin. Stir the biscuit mixture into the butter. Add the peanut butter and vanilla extract and stir gently.
- Pour the mixture into the lined tin. Let your children pat the mixture down using the back of a spoon. Make sure it's all even.
- Pour the chocolate on top of the mixture and spread evenly. Chill overnight in the refrigerator
- Remove from the tin, gently lift from the flaps, cut into 16 squares or smaller if you wish.
- Store in an airtight container and keep in the fridge. They will last approximately 3-4 days.
