Cornflake Cakes
These cornflake cakes are childhood memories, the first thing our mothers taught us in the kitchen, minimum ingredients required, no baking required, but the result is a right treat. It can be their treat for finishing their work or completing a chore.
You have the kids at home and need to keep them occupied every day, you run out of things to do, or you are struggling. We are here to help. Schedule baking time for them once a week and allow them to enjoy this time. Not only is it great for them, but also the parents too.
You can opt for sugar-free chocolate or low sugar chocolate.
Makes 24
Ingredients:
- 75g unsalted butter
- 200g dark chocolate, broken into chunks
- 4 tbsp golden syrup
- 200g cornflakes
Method:
- Melt the butter, chocolate and golden syrup in a small saucepan over low heat. Remove and cool at room temperature for 5 minutes.
- Line a cupcake tin with 24 cases, or you can use a baking tray.
- Stir the cornflakes into the melted mixture, spoon into the cases and allow to set.
These will keep in an airtight container for 2 weeks. But we doubt these will last in your cupboard for 2 weeks, most likely be eaten within 10 days!
Decorating Ideas: Top with mini eggs for Easter, or make carrots and bunny ears out of sugarpaste.
