Blueberry Cake Recipe
Blueberry cake is perfect for lots of events, family dinners, picnics or even if you want to try something new just for you. The fresh blueberries give the cake an incredibly tasty aroma, and soft texture to the cake, not to mention each slice looks incredibly alluring as the blueberries can be told apart from the cake.
Ingredients:
- 300g granulated sugar
- 320g plain flour - sifted
- 1 tsp salt
- 1 tsp baking powder
- 250ml milk
- 125ml vegetable oil
- 2 tbsp melted butter
- 350g fresh blueberries with 2 tsp of plain flour
- 2 tsp vanilla extract
- 2 large eggs – beaten
- Preheat the oven to 190C Fan/Gas mark 5/375F.
- in a bowl, sprinkle 2 teaspoons of flour on to the blueberries (this prevents the blueberries from sinking to the bottom)
- Mix the flour, sugar, baking powder and salt in a bowl, gently fold in. Then add the milk, eggs, vegetable oil and vanilla extract and mix. Add the blueberries to the mixture and fold gently. (Be sure not to over beat the mixture)
- Place the cake in the oven and bake it for 35 to 40 minutes (Or you can take it out around 25 to 30 minutes and sprinkle some icing sugar and then leave it in for 10 more minutes. Once again this is entirely up to you)
- Remove from the oven and place the tin on a cooling rack. Enjoy your baked treat.
